Lefse

When I was a young teenager, I spent alot of my time at my best friend, Deannas' home. She had a wonderful family, that always made everyone feel so welcome and special. Her mom used to make this tastey creation from leftover potatoes. I had never tasted Lefse before that. Mrs M introduced me to a new favorite. It is actually a Norwiegian flatbread. This is the recipie I use from the Company's Coming Cookbook.

LEFSE
6 cups Mashed Potato
3tbsp Butter (softened)
1 tsp Salt
1/2 cup Milk
3 cups All Purpose Flour (I use equal parts white and brown)

Mix all ingedients together and make tangerine sized balls. Roll out on floured surface. Fry on dry 400 degree griddle, turning once.
Serve spread with butter and roll up. I like to have them with home made soup.
My kids love them.

I just had a phone call from my manager. I have been awarded a posting I had applied for before christmas. I had almost forgotten about it. This posting gives me access to more wards. I will be doing a relief position filling in all over the hospital. I love the variety! But it isnt casual. I will have a schedule every six weeks, so I can plan my life. The best thing is it is only three quarter time, which works out to 3 or 4 days a week. So I will have a bit more free time! I can pick up extra shifts if I want to and they will always be overtime because it will be over and above my slated hours. I really needed this.

Things I will have more time for with this change.....
Outings with Hubby- Gosh I have missed those lately.
Long walkies with the dog.
Photo shoots, maybe some with Deanna!
Road trips! Turn up the tunes and hit the gas!
More energy to be the Evil Homework Enforcer.
Gardening!
Housework. I actually enjoy tidying my house when I have the time.
More trips to the Ranch for Karaoke.
Working on my scrapbooking!

I think this warrants a celebration. Im going to make myself a mocha!

I can hear my 19 yearold son in the kitchen making himself a coffee. He is singing Candle in the wind in his baritone voice. What 19 year old sings Elton John? I love it! And they give me a hard time when I sing Nickleback tunes!

I feel good!

Hi! Thanks for your note. So good to see a new visitor. I am going to try to get the blog working again soon. I really have missed it. (I have tried to upload photos and post at least 40 times in the past several months! It is so aggravating.) If I can't get it to work, I am probably going to change to typepad. I just have not had the time or energy to deal with the related frustration. Will let you know when I am back up. I'll be back to read more here! Can't wait to try this recipe. Sounds yummy. How many does this make? I am trying to figure out the correct ingredient proportions for 2 people. I think it will be great with Indian curries!

Hi Susan, so glad to see your post and find you feeling so positive about life. I am thrilled to see that you are getting over the blues that were hanging around last week. You must be feeling healthy again and this new posting seems to be such a good move for you. I'm glad you will be getting a bit more time off and time to kick back a bit.

Maybe, once this arctic spell finishes, you can come up for a day or two. If you have all this energy, you can paint my kitchen!!! Just kidding. We bought paint on Monday and I will probably get started in a couple of days. Just getting started is the hard part, once I get the lid off, it is all systems go.

Hope your euphoria continues. I remember you raving about the lefse when you used to go to Deannas, however I didn't know you were making them.

Here you go... this how you were brought up on leftovers, we couldn't waste that good food., this description from Wikipedea( I think the name come from the sound after it has been eaten)

Bubble and squeak (sometimes just called bubble) is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner. The chief ingredients are potato and cabbage, but carrots, peas, brussels sprouts, and other vegetables can be added. It is traditionally served with cold meat from the Sunday roast, and pickles. Traditionally the meat was added to the bubble and squeak itself, although nowadays the vegetarian version is more common. The cold chopped vegetables (and cold chopped meat if used) are fried in a pan together with mashed potato until the mixture is well-cooked and brown on the sides. The name is a description of the action and sound made during the cooking process.

2007 sounds like a very promising year for you! It will be great to have a six week schedule so you can plan things.

A Ha.... Lefse... my first real love. I had a whole pot of left over mashed potatoes and the husbandman said to me... so there you go... get to it... how about making us some lefsa. True to my form, I froze the mashed potatoes so they could be eaten in the original form. I have made it in the past, and it turned out... sorta kinda.

Well... once the weather perks up a bit, we will have to charge our batteries and go sneaking around this big world and capture it in all it's glory. I think we should consider our photography club that we wanted to attend. I am currently yearning for a telescopic lens. Eventually I am going to make my way in Kerrisdale cameras and buy the thing. I have spotted a bunch of left over change on the husbandmans dresser. Which I usually take and put away. I believe I am going to take it away a little more permanently. Also.. that pop can collection is going to put into a small fund. SEE.. what I am getting at here, is I am not going to use the money we both make weekly, but rather come up with ingenious ways to collect cash without really collecting it. I could do something really smart.. and work an extra day at work, and I wouldn't have to go this route, but you know.. why do things the simple way.

I am glad that you are feeling better, I hate those slumps that one can very temporarily fall into. VITAMIN B COMPLEX is always a good choice for me. I know I can't stand that overwhelming list that builds up inside your head, and continues to grow and grow, even though you are working hard at cutting the list.

I was thinking about something the other day. We play this game "mah-jong", and I have been taught by a couple that knows the game very well. When I first learned how to play, his advice that he would continually spell out was "simplify". As I was busily cleaning up the house the other day.. I kept saying that... soon enough, the day took on another meaning. It was interesting... welll at least to me. I now have bags upon bags of stuff that was taking up space, and complicating this space that I/we inhabit. It felt good to simplify.. who needs to wait for spring!

Oh, one last thought... for the first commenter.. who cares about ingredients for two people... this fabulous stuff can be frozen in "saran wrap".. for later times. Just roll it up... you'll be glad you did!
